We’re all familiar with the things that signal the beginning of Spring – extra hours of daylight, budding flowers… and Cadbury Creme Eggs on display. Everywhere. But one Cadbury Creme Egg is the equivalent to an entire day’s worth of sugar (20g or 5 teaspoons of sugar) – shocking, right? Rather than reaching for the Easter basket, why not aim to reintroduce some fresh foods into your diet after a long winter? Here are some springtime foods that you should be eating to promote health.
1 cup of strawberries is loaded with vitamins, minerals and phytonutrients. In fact, each cup has 3 grams of fiber and more than a full day’s recommended dose of vitamin C—an antioxidant that helps keep skin healthy. Strawberries are amazing alone or with other foods. They are a great addition to smoothies, cereal and yogurt!
Eggs are packed with protein, which staves off hunger. Studies have shown that those who eat eggs for breakfast feel fuller longer and may lose more weight than those who take in the same amount of calories from a bagel for breakfast. Asparagus is an excellent source of vitamin K, vitamin A, folate, and iron. Asparagus can be great for kids because they come in green, purple and white varieties and it goes well with all kinds of foods – not to mention, the spears are fun to dip and eat!
Filling up on fiber- and water-rich foods first can help prevent you from overdoing high-calorie fare later. Not a fan of salad? Vegetable soups achieve the same result – in fact, people who start lunch with vegetable soup often eat less overall.
Mushrooms are high in minerals and B vitamins, are beneficial for the immune system, and have been studied for anti-inflammatory effects. They also taste meaty but have only a fraction of the calories and fat of red meat. If you’re looking for a good “meatless Monday” meal idea, try some black bean and mushroom tacos!
Total Time: 20 minutes
Yield: 16 deviled eggs
- 8 eggs, hard boiled
- 3/4 cup mayonnaise
- 1 cup broccoli florets, cooked and chopped (* you can add in any other vegetables that you like here – cauliflower, asparagus, peas, etc!)
- 1/8 tsp. garlic powder (or more, to taste)
- Cut each of the eggs in half and remove yolks. In a medium bowl combine yolks, mayonnaise and broccoli florets and garlic powder. Season your eggs with salt and pepper to taste.
- Stuff each egg with the prepared stuffing. Lay the stuffed eggs out on a platter, and enjoy! You can sprinkle each egg with a little pepper or paprika if you like!
Despite the Easter goodies, Spring is probably one of the easiest times of year to eat healthy. There are so many yummy foods in season, like the ones I’ve mentioned, and I encourage you to enjoy them all!
